Caesar Salad for Recipe Friday
It’s been a busy week and there hasn’t been much new being cooked around here. I’ve been trying to think of what to post for Recipe Friday, but seem to be lacking in creativity. I finally decided to post my husband’s favorite salad recipe. It’s not the healthiest of salads because it has a lot of fat. But there are low fat versions of the dressing that taste really good.
Caesar Salad
Ingredients:
1 – 2 heads of Romaine lettuce hearts
¼ – ½ cup shredded Parmesan cheese
Caesar salad croutons
⅛ – ¼ cup Caesar salad dressing
Directions:
Rinse the Romaine lettuce hearts and pat dry. Cut off the core at the bottom and discard. Starting at the bottom, cut the Romaine hearts at ½ inch intervals, then cut any large strips to smaller pieces. Place all lettuce in a large bowl. Sprinkle with Parmesan cheese and croutons, and toss. Add dressing and toss to coat lettuce evenly.
Note about lettuce: You can use just whole heads of Romaine, but I like the hearts that you can buy in a bag in the produce department. It seems when I buy a whole head I end up throwing away the outer leaves.
Note about Parmesan cheese: I like to use the pre-shredded kind found in the main cheese department, and not the grated kind that you can get near the pasta aisle and that is typically used as a pasta topping.

My dressing solution is an imitation of Kraft Calories Wise … Works out to about 5-10 calories per tbsp… It’s not a ceasar but I can pretend! lol

Ann, The low fat brand I’ve been using is 60 calories per tbsp, and as long as I watch what else I eat and don’t do Caesars every night it’s been working out for me. I tried the spray on dressing one time, because it is very low cal, but it has no flavor at all! Peace, Linda
